After my mother passed away, I inherited her little file box of recipes. I am sharing them here for all her descendants and anyone else who might enjoy them. Most of them are quite outdated as we have access to a greater variety of ingredients now, we eat healthier and we have internet to help us! If you do use one of the recipes, I would love to have a comment on what you think of it.

Chicken & Stuffing Bake

400 degree oven for 30 minutes
Serves 4 - 6

4 cups Pepperidge Farm Herb Seasoned Stuffing
4 T. margarine
4 to 6 skinless, boneless chicken breast halves
Paprika
1 can (10 3/4 oz) Cream of Mushroom Soup
1/3 cup milk
1 T. chopped fresh parsley

  1. Mix stuffing, 1 1/4 cups boiling water and 4 T margarine
  2. Spoon stuffing across center of 3-qt shallow baking idsh. Place chicken on each side of stuffing. Sprinkle paprika over chicken.
  3. Mix soup, milk and parsley. Pour over the chicken.
  4. Bake covered at 400 degrees for 30 minutes or until chicken is no longer pink.

Oatmeal Crispies

350 degree oven for 10 minutes

1 cup shortening
1 cup brown sugar
1 cup granulated sugar
2 beaten eggs
1 tsp. vanilla
1 1/2 cup flour
1 T. soda
1/2 tsp. salt
3 cups quick oatmeal
1/2 cup chopped nuts

Mix in order given. Sift flour, soda and salt together. Form in long rolls, wrap in wax paper and chill in refrigerator. Cut 1/2 inch thick. Bake at 350 degrees for 10 minutes

Cresents

300 degrees for 20 minutes

Cream 1 cup butter and 1/4 cup confectioners sugar.
Add 2 tsp vanilla and 1 T. water.
Add 2 cups flour and mix well.
Add 1 cup chopped pecans.

Form roll 1 1/2 in long. Bake on ungreased cookie sheet in a slow oven - 300 degrees for 20 minutes. While hot roll in confectioners sugar.

Old Fashioned Soft Sugar Cake Cookies

400 degree oven for 10 minutes

2 cups sugar
1 cup butter and lard
1 cup thick cream
4 eggs
1 stsp soda
1 tsp cream of tartar
5 1/2 cups flour

  • Thoroughly cream the sugar and shortening. Stir in the cream and eggs.
  • Add the dry ingredients which have been sifted together. Mix well.
  • Chill overnight
  • Roll on floured board to 1/4 inch thickness.
  • Cut out with cookie cutter.
  • Sprinkle sugar on top.

If you want to decorate with raisins in the center use cooked ones.
Bake for 10 minutes at 400 degrees.

Holiday Cranberry Bread

I could have used this last week!

350 degrees for 60 to 70 minutes

Sift together:
2 cups sifted flour
1 cup sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp salt

Combine juice and grated rind of 1 orange, 2 T. shortening and enough boiling water to make 3/4 cup

Add 1 egg well beaten

Blend liquid into dry ingredients and stir only until flour is dampened

Add 1 cup chopped nuts and 1 cup raw cranberries, halfed

Pour into greased bread pan. for well rounded loaf push batter up into the corners of the pan leaving center slightly hallowed. Cool thoroughly before slicing.

Olive Chick-ettti

Serves 8 - 10

1 5-lb stewing chicken
1/4 cup oil or shortening
6 cups hot water
1 T. salt
1/3 cup chopped onion
1/3 cup diced green sweet pepper
2 cups sliced celery
1/2 cup diced pimiento
1 lb spaghetti
1 1/2 cup whole or pitted ripe olives
2 cups grated cheddar cheese

  • Disjoint chicken and brown in hot oil. Add hot water and salt, cover and cook slowly until tender. Cool sufficiently to handle.
  • Skim off excess fat.
  • Remove skin and bones from chicken, leaving meat in large pieces and return to broth.
  • Cook onion, pepper and celery in a little of the chicken fat until wilted and clear.
  • Stir into chicken and broth, add pimiento and heat to boiling.
  • Add broken spaghetti. Boil until spaghetti is tender, adding more water if needed.
  • Cut some of the olives into large pieces and leave some whole.
  • Just before serving, stir olives and cheese into chicken mixture and heat slowly until cheese is melted.

Broiled Chicken in Soy Sauce

I remember this recipe. I gave it to my mother back in the late '70's or early '80's. It was from a low carb diet I was on. It really is very good. I lost my copy and haven't made it for years. Might have to try it again!

2 1/2 - 3 lbs chicken pieces
1 tsp onion salt
1/2 tsp pepper
1/2 cup soy sauce
1 clove garlic, crushed
2 T. lemon juice
2 tsp sugar substitute

  • Sprinkle chicken with onion salt and pepper. Place in bowl.
  • Combine remaining ingredients and pour over chicken.
  • Chill 3 hours turning often.
  • Place chicken on rack in broiler and brush with marinade.
  • Broil about 4 in from heat for 25 minutes.
  • Brush with marinade several times.
  • Turn once during broiling.

Barbecued Chicken

This recipe came from my Aunt Lydia Brines, Dottie's sister-in-law.

350 degree oven
4 Servings

1 frying chicken, cut into pieces
1/4 cup water
1/4 cup vinegar
3 T. salad oil
1/2 cup chili sauce or catsup
3 T Worcestershire sauce
1 tsp. dry mustard
1/2 tsp. pepper
1 1/2 tsp. salt
2 T chopped onion

  • Heat the oven to 350 degrees.
  • Combine all ingredients except chicken in saucepan. Place over heat and simmer for 5 to 10 minutes.
  • Place chicken in large baking pan. Pour half of the BBQ sauce over chicken and bake, uncovered for about 45 to 60 minutes.
  • Baste with remaining BBQ sauce every 15 minutes during cooking.

Broccoli Casserole

350 degree oven for 30 minutes


  • 2 packages frozen chopped broccoli. Cook and drain. Make white sauce - 1 cup milk, 1 T flour, 1 cube butter, 1 tsp salt and 1/2 tsp pepper.
  • Beat 3 eggs, 1 small onion. Add 3/4 cup mayonnaise. Add all to sauce. Combine with broccoli.
  • Place in square pan (about 9: x 9:). Top with grated cheddar cheese.
  • Bake 30 minutes at 350 degrees

Baked Chop Suey

The name of this recipe sort of turns me off and it doesn't sound very exciting but I think the big thing back then was cooking with creamed soups - and using a lot of hamburger. If anyone comes up with an updated version, please let me know. (there is no indication of what type of rice to use but she always cooked with Uncle Ben's so maybe that is the type. I don't think it would be instant rice)


350 degree oven for 1 1/2 to 2 hours

1 lb. hamburger (browned)
2 medium onions (chopped)
2 cups chopped celery
1 can cream of mushroom soup
1 can cream of chicken soup
1/2 cup uncooked rice
1 1/2 cups to 2 cups water
Salt and pepper to taste

Combine the ingredients and bake in a 350 degree oven for 1 - 1 1/2 - 2 hours.

Green Bean Casserole

This is a recipe that I was looking for. I want to make it for Christmas Dinner. But, can you even buy Cream of Celery Soup anymore?

  • 1 package frozen french style green beans
  • 1 can Cream of Celery Soup
  • 1 package slivered almonds
  • 1 can french fried onions

Cook beans until done, drain and add soup, almonds. Sprinkle onions on top and bake in slow oven - 250 degrees for 10 minutes.

Cheese Cake # 1

1 Box lemon jello - dissolve in 1 cup boiling water and then let cool.
1-8 oz cream cheese softened
1 cup sugar and 1 large can cold carnation milk and whip until stiff. Add one tsp. vanilla.

Directions:
  • Whip the sugar and carnation milk in a mixer until stiff
  • Add cream cheese
  • Mix and add vanilla
  • Stir in cold lemon jello

Onion Casserole

Here is another recipe from Esther Lee Martin, my father's sister. This sounds really good. It doesn't say how long to cook.

350 degree oven

4 cups sliced onions (cut 1/3 in thick) preferably Vidalia
5 T butter
Salt and pepper
2 eggs
1 cup light cream
2/3 cup freshly grated Parmesan cheese


  1. Butter a 1 qt. casserole
  2. Add sliced onions to the casserole and dot with butter
  3. Generously add salt and pepper
  4. Mix the eggs and cream and pour over the onions
  5. Top with parmesan cheese

Chicken Cacciatore

4 - 6 Servings

2 lbs. chicken parts
2 T. shortening
1- 10 3/4 oz can tomato soup
1/4 cup water
1/4 cup dry red wine or 1 T. vinegar
2 large cloves garlic, minced
1 T. oregano, crushed
1/4 tsp. salt
1/2 med green bell pepper, cut into strips
1/2 cup chopped onion

  • In a skillet, brown the chicken in shortening; pour off fat.
  • Add remaining ingredients and cover.
  • Cook over low heat for 45 minutes; stir now and then.
  • Uncover, cook until sauce thickens to desired consistency.

Chicken Divan

This is a really old wonderful classic casserole. It is good with left over turkey too, which is a good thing this time of year. There are quite a few variations on this recipe.

350 degree oven
Serve 6-8
2-10 oz pkg frozen broccoli
2 cups sliced cooked chicken or 3 chicken breasts, cooked and boned
2-10 1/2 oz cans condensed Cream of Chicken Soup
3/4 cup mayonnaise or salad dressing
1 tsp lemon juice
2 oz sharp process American Cheese, shredded (1 1/2 cup)
1 cup soft bread crumbs
1 T. butter, melted

  • Cook broccoli according to package directions in salted water until tender. Drain.
  • Arrange stalks in greased 12x7 1/2 x 2 in. baking pan.
  • Layer chicken atop
  • Combine next 3 ingredients.
  • Pour over chicken.
  • Sprinkle with cheese.
  • Combine crumbs and butter. Sprinkle over all.

Bake at 350 degrees about 35 minutes or until heated.

Chicken Parmesan

425 degree oven
4 Servings
4 half chicken breasts, skinned and boned
2 cans (14 1/2 oz each) Italian Style Stewed Tomatoes
2 T. cornstarch
1/2 tsp. oregano or basil, crushed
1/4 tsp. hot pepper sauce
1/4 cup grated Parmesan cheese

  • Place chicken in baking dish. Bake covered 15 minutes in pre-heated 425 degree oven; drain.
  • Combine tomatoes, cornstarch, oregano and pepper sauce; cook, stirring constantly until sauce is thickened.
  • Pour heated sauce over chicken; top with cheese.
  • Bake 5 minutes, uncovered

Chilies Rellenos

This is in Joanie's handwriting. It is a little different than the previous Chilies Rellenos in that it has no meat but uses eggs.

Serves 6-8
350 Degree oven

1 can - 1 lb, 10 oz whole green chilies or 18 chilies
1 lb. Monterey Jack cheese, cut in strips 1" wide, 3" long, 1/4 " thick
1/2 lb. cheddar cheese, grated
5 large eggs
1/4 cup flour
1 1/4 cup milk
1/2 tsp salt and pepper to taste
Tabasco sauce and paprika to taste
  • Rinse seeds from chilies with cold water.
  • Spread single layer on paper towel to drain. Pat dry
  • Slip jack cheese strip into each chili. Arrange half of stuffed chilies in well greased 7 x 13 baking dish.
  • Sprinkle with half of cheddar cheese and paprika
  • Repeat layers
  • Beat eggs. Gradually add flour, beat until smooth.
  • Add milk, salt, pepper, and Tabasco. Beat thoroughly.
  • Pour carefully over peppers.
  • Bake uncovered at 350 degrees about 45 minutes or until knife inserted between chilies comes out clean.

Chili Relleno Casserole

350 Degree oven

  • 1 lb. ground beef
  • 1/2 cup chopped onion
  • 1/2 tsp. salt and pepper
  • 2 - 7 oz. cans green chilies, cut lengthwise
  • 1 1/2 cup shredded longhorn cheese

Brown the beef and onion. Drain off fat. Add salt and pepper.
Place half of the chilies in a 10x6x1 in baking dish. Sprinkle with cheese.
Top with meat mixture.
Arrange remaining chilies over meat.

Combine the following -
  • 1 1/4 C. milk
  • 1/4 C. flour
  • 1/2 tsp salt
  • 4 beaten eggs
  • Several dashes of bottled hot pepper sauce

Beat until smooth. Poor over meat and chili mixture.
Bake at 350 degrees

45 - 50 minutes
Cool 5 minutes and then cut into squares.

5 Minute Cream Sauce

Beat 1/2 cup milk with 1/2 cup mayonnaise.
Cook over low heat, stirring constantly, just 3 minutes. Season with salt and pepper.

Variation: Add 1/4 tsp. dry mustard, 1/2 cup grated cheese and stir until cheese is melted.

For a tangy cheese sauce for macaroni, eggs or vegetables.

Curried Fruit

I will begin at the front of the index box. All the recipes are on cards and filed alphabetically, not by category. For some reason there are no A's or B's. This recipe has a note that it came from my Aunt E. Lee.

325 Degree Oven

1/3 cup butter - melt
and then add:
3/4 cup brown sugar
2 1/2 tsp. curry powder

Combine:
2 large cans fruit salad (large pieces)
2 large cans chunks pineapple

Drain fruit. Place in a 2 qt. casserole dish.
Add the butter mixture
Bake 1 hour at 325 degrees uncovered

Good with ham.
